The Secret Ingredients

Before we jump into the recipe, let's talk about the "secret ingredients" for the patty. Drum roll, please... The big secret to our incredibly juicy and flavourful beef patty is simply salt and pepper. Yes, you read that right – no fancy spices or exotic herbs. Just a generous amount of high-quality salt and freshly ground black pepper. Sometimes, simplicity is the key to perfection!

We experimented with countless ingredients like chili sauce, bread crumbs, egg, carrot, tomato, and Worcestershire sauce for our beef patties. However, once we found out McDonald's uses only beef, salt, and pepper, we adopted the same method, and have been doing so ever since.

Let's get to the burger recipe, the focus of this blog.

Raspberry BBQ Beef Burger

(Makes 4 burgers)

Ingredients

For the Patties:

·       500g high-fat content beef (80% lean, 20% fat)

·       Salt

·       Freshly ground black pepper

For the Raspberry BBQ Sauce:

·       1 bottle Raspberry BBQ Sauce from Black Garlic Noosa

For the Burger Assembly:

·       4 Brioche buns, toasted with salted butter

·       4 slices smokey cheddar cheese

·       1 large tomato, sliced

·       1 capsicum (bell pepper), grilled and sliced

·       Pickles, thinly sliced

Instructions

Prepare the Patties

1. In a large mixing bowl, combine the high-fat content beef with a generous amount of salt and freshly ground black pepper. Divide the mixture into four equal portions and shape them into patties.

2. Preheat your BBQ grill to medium-high heat. Place the patties on the grill and cook for about 4-5 minutes per side, or until they reach your desired level of doneness.

3. During the last minute of grilling, place a slice of smokey cheddar cheese on each patty and allow it to melt beautifully over the beef. If you have a BBQ with a lid, close the lid to assist the cheese in melting.

Prepare the Toppings

1. While the patties are grilling, toast the brioche buns on the grill, face down, until they are golden and slightly crispy. Spread a thin layer of salted butter on each bun for extra flavour.

2. Grill the capsicum until it is tender and slightly charred. Slice it into strips.

Assemble the Burger

1.      To assemble the burger, start with the bottom half of the brioche bun. Add the melted cheese-topped patty, followed by a generous amount of Raspberry BBQ Sauce from Black Garlic Noosa

2.      Layer on the Tomato, grilled capsicum and pickle slices.

3.      Finish with the top half of the brioche bun, lightly pressing down to hold everything together.

Pro Tips

  • For the juiciest patties, always opt for high-fat content beef. The fat not only adds flavour but also helps keep the meat tender and moist during grilling.
  • If you're making the patties ahead of time, keep them chilled until you're ready to grill. This helps maintain their shape and prevents them from falling apart on the grill.
  • If you possess a "meat patty smasher" as demonstrated in our video, we recommend utilizing it. The process of smashing the beef patty seems to enhance the overall flavour and texture of the burger significantly.
